The DC Norris root vegetable cooker is a unique system that utilizes an auger steam chamber with a patented condensate drain system to cook root vegetables gently and without color loss. Our specially designed perforated auger ensures the steam is kept in continuous contact with the vegetables and gently transfers them through the chamber. Traditional water cooking methods bleach the colors of vibrant root vegetables like beets and carrots.

How Does the Root Vegetable Cooker Work?

Step 1: Diced vegetables are fed into the DC Norris root vegetable cooker by an infeed conveyor. The diced vegetables are then transported through the root vegetable cooker and are cooked with steam. 

Step 2: The cooked vegetables are fed from the cooker into a bi-directional chute that feeds subsequent processing or mashing machines. 

Step 3 (For Mashed Vegetables): The mashing machine mashes the vegetables. 

Step 4 (For Mashed Vegetables): Mashed vegetables are fed into ribbon blenders, and load cells monitor the weight. When the weight in one blender reaches a predefined maximum, the weigh cells send a signal to the control system and the mashed vegetables are directed into another blender. 

Step 5 (For Mashed Vegetables): Additional ingredients like milk and butter are added according to recipe requirements. 

Step 7 (For Mashed Vegetables): When the blending process is complete, DC Norris pump fill machines are used to receive batches of product from the blenders (if a cook-chill option is required). 

Step 8 (For Mashed Vegetables): The pump fill machines are used to fill and seal bags containing a pre-determined volume or weight of product in preparation for the cooling process in the tumble chillers. 

Step 9: DC Norris tumble chillers cool the product. 

What Foods are Best Suited to the Root Vegetable Cooker?

The root vegetable cooker is ideally suited to sweet and white potatoes, carrots, beets, turnips, parsnips, radishes, onions, and shallots.
