Jet Cook™

DCN Jet Cook™ Technology Explained: Faster, Cleaner, Smarter

DC Norris designed the DCN Jet Cook™ system because they know that efficiency, cleanliness, and consistency aren’t just operational goals in food production; they’re competitive advantages. Traditional cooking systems often fall short, struggling to keep up with evolving product demands and tight production schedules. That’s where the DCN Jet Cook™ system comes in.

Developed to revolutionize how food is processed on an industrial scale, the DCN Jet Cook™ system benefits include:

  • Energy-Savings: Jet Cook™ delivers significant reductions in energy consumption.
  • Rapid Processing: Jet Cook™ substantially cuts down processing times and stages by mixing, heating, pumping, and mixing ingredients simultaneously.
  • Enhanced Product Quality: The DCN Jet Cook™ system ensures consistent product quality and flavor while retaining particulate integrity due to the quick heating and mixing, all without any moving parts.
  • Reduction in Ingredient Quantities: In many cases, the amount of starches and spices required can be reduced using the Jet Cook™ system. This improves nutritional profiles without compromising product taste or quality while improving profitability.
  • Reduced Cleaning Demands: The Jet Cook™ system reduces batch contamination and burn-on, which reduces cleaning downtime and operational costs while increasing production levels.

What is the DCN Jet Cook™ System?

The Fastest and Most Efficient Steam Injection System For Large Process Kettles

Jet Cook™ is a revolutionary fluid processing solution that can heat, mix, entrain, and pump, with impressive performance. The system uses high-performance steam technology and is suited to foods of a pumpable consistency. Unlike conventional steam jacketed kettles or external heat exchangers, the Jet Cook™ system efficiently collapses steam directly into the product through a high-shear nozzle. This not only cooks food faster but also prevents burn-on contamination and retains particulate integrity.

Built for flexibility, the DCN Jet Cook™ system can be integrated into batch or continuous cooking lines and tailored for a wide range of food applications from delicate dairy products to thick sauces, fresh pet foods, and plant-based meals. Jet Cook™ can be purpose-built or retrofitted to almost any steam jacketed kettle.

How the DCN Jet Cook™ System Works

At the heart of the Jet Cook™ system is a specially engineered nozzle (the Jet Cook Head) that injects steam directly into liquid or pumpable consistency products at high speed. As steam is introduced, it condenses instantly and transfers its energy directly to the product, cooking it rapidly and evenly.

This process is paired with high-shear or low-shear mixing that maintains turbulence within the cooking vessel, ensuring consistent heat distribution even in high-viscosity or particulate-rich products. The result is a uniform cook without hot spots or burn-on.

In automated systems, operators can control the Jet Cook™ system through an HMI interface, setting time, temperature, steam rates, and recipe variables. The system integrates easily with DC Norris’s kettles, cooling systems, and recipe management software for a fully connected process.

Faster: Unmatched Speed and Throughput

Speed is where the DCN Jet Cook™ system stands out. By eliminating the lag time associated with heating vessel walls and indirect energy transfer, this technology can cut cook times by up to 50% or more, depending on the product.

This efficiency doesn’t just improve output; it reduces energy use by limiting heat loss and shortening batch cycles, leading to lower utility costs, higher production output, and a more sustainable operation.

Cleaner: Less Burn-On, Less Waste, Easier Cleanup

Beyond speed, one of the standout advantages of the DCN Jet Cook™ system is its cleanliness. Traditional cooking methods, especially with thick or sticky products, can lead to scorched residue (burn-on) on kettle walls. This not only affects flavor and appearance but also increases downtime for cleaning and maintenance.

Because the Jet Cook™ system delivers heat directly into the product, it minimizes the requirement to heat with the vessel walls and virtually eliminates burn-on. That means less waste, more consistent product quality, and easier cleaning cycles.

Less manual cleaning also means more uptime, which translates into better overall productivity and throughput.

Smarter: Greater Control and Consistency

In modern food manufacturing, consistency is just as important as speed. The DCN Jet Cook™ system offers intelligent automation and recipe control to ensure each batch meets precise specifications.

Operators can manage parameters like cook temperature and flow rate from a digital interface. Recipes can be stored and repeated without deviation, reducing operator error and ensuring high-quality, repeatable product consistency.

This level of control also supports regulatory compliance, product traceability, and quality assurance efforts.

Results in the Field

Food manufacturers across North America and around the globe have adopted the DCN Jet Cook™ system to streamline operations and meet growing demand.

Across the board, Jet Cook™ users report improvements in batch processing times, cleanliness, and product integrity, without the trade-offs typical of traditional systems.

Is DCN Jet Cook™ Right for Your Facility?

The Jet Cook™ system is ideal for manufacturers producing foods of a pumpable consistency, including:

Jet Cook™ is available as part of turnkey systems or as a retrofit option for existing kettles. Whether scaling up capacity or optimizing current operations, Jet Cook™ can be configured to meet many needs.

The Future of Cooking is Here

Faster, cleaner, and smarter. That’s what today’s food processing plants need, and that’s what the DCN Jet Cook™ system delivers. By cutting cook times, reducing waste, and giving operators unprecedented control, DCN Jet Cook™ sets a new standard for industrial food preparation.
