One Kettle System, Three Ways to Cook:
All built with operator safety at the forefront.
Our kettles have an integral safety grid that lets operators load ingredients while the agitator is running. They’re also insulated and clad in stainless steel, cutting heat loss, saving energy, and keeping the exterior safe to work around.
The patented design of the DC Norris Jet Cook next-generation steam injection lance offers the fastest and most efficient form of steam cooking available. Due to the steam injector’s shape, the product is drawn through the nozzle as a jet stream and is pumped, heated, and mixed simultaneously. The jet cook head has no moving parts which protects particulate integrity and eliminates burn-on.
Can be retrofitted to existing kettle systems of 80 gallons+.
A pressure-style lid can be fitted for pressure cooking up to 15 psi as standard. This reduces cook times considerably, especially for stews and pie fillings.
The braising bar sears and caramelizes product directly on the kettle surface, the same prep step that a roux, a sauce base, or a curry spice blend needs before the rest of the recipe goes in. With the braising bar, one vessel can handle the prep and cooking.

- High-pressure jackets for steam up to 102psi
- Built to ASME, British, and European Construction and Design Codes
- Hemispheres constructed from thicker materials to prolong life
- Inclined agitation with complete variable speed via frequency inverter for excellent particulate distribution, blue food grade scrapers fitted as standard
- PT100 Temperature probes are placed in the heart of the vessel and at the bottom, allowing for accurate temperature measurement, control, and the ability to record data even as the product is emptied
- The lid is designed with a large, hinged section which allows for both mechanical product loading and hand additions as required
- An integral safety grid allows the operator to load ingredients while the agitator is running, ensuring homogeneous mixing throughout the process
- The entire kettle is insulated and clad in a stainless-steel sheath to save energy and to provide a safer environment for the operator
- All internal surfaces are ground smooth and flat, and the entire design offers a crevice-free, easy-to-clean finish
