After cooking the food product and dividing it into flexible plastic casings, the full bags are placed inside the tumble chiller. Within the tumble chiller, the bagged product is submerged in chilled water, which the drum rotates, gently tumbling the bags and massaging the product to ensure absolute cooling. The food within the tumble chiller is chilled to below 39.2° Fahrenheit and, depending on the food’s viscosity, can take 60-90 minutes to reach its ideal cooling temperature.

Tumble chillers are effective for complete and even cooling of foods, and they can also decrease the likelihood of food contamination. Improper food cooling practices can be a contributor to many foodborne illnesses. Dangerous microorganisms can thrive within 140° – 41° Fahrenheit. To protect the food from any contamination, it is vital to minimize the amount of time a product is within these temperature limits. With a tumble chiller, the sealed casing coupled with the rapid cooling process is a double barrier to protect the food from any contamination pathogens.

With the food product safely cooked and cooled within the casings, the product can have up to a 45-day refrigerated shelf life. Conventional walk-in refrigeration units cannot reduce foods’ temperature quickly enough to achieve the same consistent results as a tumble chiller. With a tumble chiller, the food product is cooled in a constant environment that produces a safe to use product that can be either used immediately or frozen for use later.
